Recipe: Taffy Apple Salad

TAFFY APPLE SALAD

1/2 c. sugar
1 Tbsp. cornstarch
2 Tbsp. lemon juice
1 egg, beaten
1 (20 oz.) can pineapple chunks
1 (8 oz.) carton Cool Whip
3 medium Delicious apples, cored and chopped
2 c. miniature marshmallows
1 1/2 c. salted peanuts

In heavy saucepan, mix sugar, cornstarch, lemon juice,
egg and juice from pineapple. Cook over low heat, stirring
constantly, until mixture thickens (about 5 minutes). Cool.
Stir in whipped topping. In large bowl mix apples, pineapple chunks, marshmallows and peanuts. Toss with dressing and refrigerate 2 to 3 hours. Makes about 16 servings. Tastes like taffy apples.
