Tofu, Tomato, and Basil Salad

Simple, delicious and a beautiful presentation. A takeoff on the classic Mozzarella, Tomato, and Basil salad.

Make a bed of fresh greens. I love arugala or watercress.
Slice the tofu into about 1/4-inch slices. Slice a tomato or two. Clean a some fresh basil. Now layer on the bed of greens...tofu, tomato, basil...
tofu, tomato, basil...etc... (I make a cirlce around the circumference of the platter) You can layer them widthwise, lengthwise...

Serve with tamari or soy sauce and wasabi, or make a dressing out of tamari (soy sauce), fresh lemon juice, and a tad of sweet vinegar ( I use rice vinegar). Sorry I have no exact measurements on this. It's so simple you can't go wrong.

Oh... I use the sliced off ends of the tomatoes in the center of the platter all chopped up or you can place a big bunch of alfalfa or sunflower sprouts in the center. Can be made up to a few hours in advance and refrigerated convered with plastic wrap.
