Overnight Salad

1 head lettuce, washed, cored and drained
1 medium onion, chopped
1 and 1/2 cup chopped celery
6 hard-boiled eggs
1/2 lb. bacon, chopped, cooked and drained
2 cups frozen peas
2 cups reduced fat mayo
3 T. sugar
2 cups shredded cheddar cheese

In a large bowl, place bite sized pieces of torn lettuce until bowl is slightly more than half full. Sprinkle onion and celery over lettuce. Lightly cook peas; drain and cool. Sprinkle over lettuce mixture. Add bacon and chopped hard-boiled eggs. Mix mayo and sugar together. Spread over the top of the salad, making sure to seal the edges. Sprinkle with cheese. Cover and refrigerate overnight for a noon meal or make early in the morning for the evening meal.
