Recipe: Perfect Potato Salad

PERFECT POTATO SALAD

2 1/4 lb unpared medium potatoes
1/2 cup bottled Italian-style dressing
3/4 cup thinly sliced celery
1/2 cup thinly sliced radishes
1/4 cup finely chopped cucumber
1/4 cup finely chopped onion
2 tablespoons finely chopped pimiento
2 hard-cooked eggs, corsely chopped
1 1/4 cups mayonaise
1 scallion with green top, thinly sliced
salad greens

Cook scrubbed potatoes in small amount of boiling, salted water, covered, just until tender--about 35 minutes. Drain, and let cool slightly. Peel potatoes; cut into 1/2 inch cubes. In large bowl, using fork, lightly toss potato cubes with Italian-style dressing. Refridgerate, covered, 1 1/2 to 2 hours. Add rest of ingredients, except scallion and greens. Toss gently to mix well; refrigerate, covered, until well chilled--at least 2 hours. Turn into serving bowl; sprinkle scallion slices over top. Garnish bowl with greens.
