Clafoutis, a French dessert, is traditionally made with cherries. It was a revelation when a friend brought me a clafoutis she had made with lychees! I've since experimented with other tropical fruits.
Tropical Clafoutis
1-1/4 cups milk (lowfat okay)
1/3 cup sugar
1 tablespoon vanilla
3 eggs
2/3 cup flour
1/8 teaspoon salt
any kind of fruit - cherries, berries, peaches, lychees, papaya, mango, or a combination
Preheat oven to 350F.
Place all ingredients except fruit in a blender and blend 1 minute at top speed.
Pour 1/4-inch layer of batter into a greased glass or ceramic baking pan. (I use a Pyrex deep-dish pie pan or a ceramic heart pan). Bake 2 minutes.
Arrange fruit evenly over batter. Pour remaining batter over fruit. Bake about 1 hour, until a knife inserted in the center comes out clean.
Serve warm or at room temperature.
