Recipe: Tuna Jackstraw Casserole

TUNA JACKSTRAW CASSEROLE

1 (4-ounce) can shoestring potatoes
1 can condensed cream of mushroom soup
1 (6 1/2-, 7- or 9 1/4-ounce) can tuna, drained
1 (6-ounce) can (2/3 cup) evaporated milk
1 (3-ounce) can (2/3 cup) broiled sliced mushrooms, drained
1/4 cup chopped pimiento

Prheat oven to 375 degrees F.

Reserve 1 cup of shoestring potatoes for topper.

Combine remaining potatoes with the other ingredients. Pour into 1 1/2-qt. casserole that has been sprayed with non-stick cooking spray. Arrange reserved potatoes on top.

Bake uncovered for 20-25 minutes or until thoroughly heated.

Makes 4 to 6 servings.
