Turkey Hash

Makes 6 servings
1 tablespoon butter or margarine
1 large potato, peeled and cubed
1 green bell pepper, chopped
1 medium onion, chopped
1 tablespoon fresh or 1 teaspoon dried sage
1/2 teaspoon salt
1/2 teaspoon pepper
2 cups chopped cooked turkey
1 (8-ounce) jar turkey gravy
1 (8-ounce) package cornbread stuffing mix
Melt butter in a nonstick skillet over medium heat; add potato, bell pepper, and onion. Sprinkle with sage, salt, and pepper. Top with half each of turkey, gravy, and stuffing mix; repeat layers. Cover, reduce heat, and cook 35 to 40 minutes or until vegetables are tender.
