TURKEY NUT SALAD
1/2 cup seedless grapes
3 or 4 Tbsp. almonds
Juice of 1/2 lemon
Grated rind of 1/2 orange
1 cup mayonnaise
2 cups diced cooked turkey
1/2 cup sliced celery
Lettuce or endive leaves (for serving)
1/2 tsp.paprika (to garnish)
Dip grapes first in boiling water for about 10 seconds, then in cold water; peel.
Quickly dip almonds in and out of boiling water. Remove skins; cut each in half. Spread on a baking sheet and brown in 350 degree F oven for 2 minutes.
Add lemon juice and orange rind to mayonnaise. Toss turkey, peeled grapes, celery and almonds in mayonnaise mixture.
Arrange turkey mixture on lettuce or endive leaves. Sprinkle with paprika, serve.
Makes 4 servings
