This is what I'm going to try with the leftovers...

Take 2 flour tortillas, put down a thin layer of Jack cheese, layer of sliced turkey, layer of red onion slices, scatter with minced black olives and another thin layer of cheese. Dry toasted (in a frying pan) on both sides till crisp then cut in half and then wedges.

Serve with some of your leftover cranberry sauce that you add some crushed pineapple to, minced jalapenos and a splash of vinegar of your choice to make it a salsa. Serve the wedges with the salsa and a dollop of sour cream or plain yogurt...whatcha all think? sounds yummo to me!
