Recipe(tried): Velveeeta Cheesy Beef Stroganoff

A couple evenings ago I adapted this recipe to use lower fat ingredients. It was true comfort food, but with a lot less guilt!!DH says it's a keeper.

VELVEETA CHEESY BEEF STROGANOFF

1 onion, chopped
1 lb. organic low fat ground beef
2 cups water
3 cups No Yolk noodles, uncooked (I used the ones called Dumplings)
1/2 lb. (8 oz.)Velveeta 2% Mild Pasteurized Prepared Cheese Product, cut into 1/2-inch cubes
1 can (10-3/4 oz.) 98% fat free condensed cream of mushroom soup
1/4 tsp. black pepper

Saute onion and meat in large skillet; drain.

Stir in water; bring to boil. Stir in noodles; cover. Simmer on medium-low heat 8 min. or until noodles are tender.

Add Velveeta, soup and pepper; cook until Velveeta is melted, stirring frequently.
