Won Ton Taco Cups
1 1/2 lb Ground sirloin
1 med Onion, chopped fine
1 tb Cumin, ground
2 ts Oregano, crushed
2 cloves Garlic, minced
1 1/2 c Cheddar cheese, grated
1 1/2 c Monterey Jack, grated
3 lg Tomatoes, seeded, diced
1 can Olives, black, sliced
1 pkg Wonton wrappers
Olive oil
Saute ground sirloin, onion and garlic over med-high heat until well-browned. Drain off oil and return to head. Add cumin, oregano and salt & pepper to taste.
Lightly brush a wonton, front and back, with olive oil. Gently place wwonton into a mini muffin cup arranging corners into a star-like shape. Repeat with remaining wontons. Bake at 350~ about 5-7 minutes, or until corners just barely begin to brown. Remove cups from oven.
Place a heaping tsp of ground beef mixture into each cup. Top with diced tomatoes, Mix the two cheeses together, then top tomatoes with a generous tsp of the cheese mixture. Top with sliced olives. Return to oven and bake an additional 5-7 minutes, until cheese is melted and bubbly and wontons are golden. An original creation by Terry Grant.
