According to the Texas Beef Council:
Cooking Timetable
"For brisket, allow at least one hour of cooking time per pound. Many variables will affect actual cooking times (ie: outside cooking temperature, amount of charcoal, the number of times the lid is removed and proximity of food to the heat source.) Please use this formula as a guideline. A properly cooked brisket is well done and fork tender."
"One of their grilling recipes for brisket suggests:
Cook until the internal meat temperature is between 200-210 degrees F. Remove the meat from the fire and let rest still wrapped in foil for about an hour."
