Recipe: Lemon Texas Sheet Cake with Lemon Icing (using sour cream)

LEMON TEXAS SHEET CAKE
"Moist and lemony."



2 cups all-purpose flour
2 cups sugar
1 teaspoon baking soda
1 teaspoon salt
1 cup butter OR margarine
1 cup water
2 eggs, beaten
1/2 cup sour cream
1 teaspoon Spice Islands Lemon Peel
1 teaspoon Durkee 100% Pure Vanilla Extract
1/2 teaspoon Durkee Pure Lemon Extract
Lemon Icing (recipe follows)

Preheat oven to 350 degrees F.

Combine flour, sugar, baking soda and salt in a large bowl and mix well.

Bring butter and 1 cup water to a boil in a large saucepan. Remove from heat and pour over flour mixture. Stir in eggs, sour cream, lemon peel, vanilla extract and lemon extract. Pour into a greased 15x10-inch pan.

Bake for 25 to 30 minutes or until cake is golden brown.

Pour Lemon Icing over hot cake. Cool and cut into bars.

LEMON ICING

1/2 cup butter OR margarine
1/4 cup milk
4 1/2 cups powdered sugar
1 teaspoon Durkee Pure Lemon Extract

Combine butter and milk in a saucepan; bring to a boil. Remove from heat and add powdered sugar and lemon extract. Beat until smooth.

Makes 1 sheet cake
