Herbs and Spices Aceite con Achiote - Achiote (Annato) Oil
One cup vegetable cooking oil
1/2 cup of achiote (annatto) seeds
In a saucepan, heat oil on medium. When it is hot, turn the heat to low, and add the achiote seeds. Stir occasionally for 5 minutes, or until the oil turns bright orange. Cool completely. Strain through a paper lined sieve directly into a glass container. Cover and refrigerate. Use this oil in the amounts called for in various Puerto Rican recipes. The goal here is to gently steep the seeds in oil. Cooking on high heat may cause splattering, and the dye is downright difficult to remove from your clothes.
