American Apple Pie

Serves 12
Crust:
2 2/3 c. flour
1 tsp. salt
1 c. shortening
8 Tbls. cold water(approximately)
Mix flour, salt & shortening until consistency of cornmeal. Add water till dough sticks together & you can form it into a ball. Divide dough in 2 halves. Roll out 1 half to fit 10 inch pie plate. Line plate with pastry.
Pie filling:
12 c. apples, peeled, cored & sliced(10-12 large apples)
3/4 c. brown sugar
1 Tbls. lemon juice
1 tsp. nutmeg
1 tsp. cinnamon
1 Tbls. butter
Slice apples into 10" pie plate till heaping full. Then turn apples into a bowl along with sugar, lemon juice & spices. Mix well. Return apple mixture to pie plate, pressing apples firmly as you do. Dot with butter, Roll out second half of pastry & place on top of pie, sealing edges firmly. Slash the letter "A" in top to let steam out.
Bake at 425F. degrees for 20 minutes, reduce heat to 400F. degrees & bake another 20 minutes. Then reduce heat again to 375F. degrees for 20 minutes more or till crust is nicely browned & apples feel done when you put a knife through the slashed "A". If you use Macintosh apples, this may not take a whole hour.
