Recipe: Baked Apple Pancake
Breakfast and BrunchBAKED APPLE PANCAKE
FOR THE APPLE MIXTURE:
3 tbsp margarine
2 cups of peeled and sliced apples
1/4 cup chopped nuts
1/2 cup raisins or dates
2 tbsp cinnamon/sugar mixture
FOR THE BATTER:
1 cup bisquick or baking mix
3 eggs, beaten
2 tbsp sugar
1 tbsp oil
2 tbsp cinnamon/sugar mixture (for topping)
Preheat oven to 400 degrees F. Grease a 9-inch pie dish.
Melt margarine in saute pan. Add apples to pan and cooked 5-6 minutes until tender.
Add nuts and raisins or dates, and sprinkle with cinnamon sugar. Remove from heat and cool slightly.
Place the apples in prepared pie dish; set aside.
Combine the ingredients for the batter and pour over the apple mixture. Sprinkle with additional
2 Tbsp of cinnamon sugar mixture. Lightly cover with foil.
Bake in a 400 degree oven for 20 minutes. Turn off oven, and remove foil and allow to sit for 5 minutes.
