Recipe(tried): Blackberry Cobbler, Easy Peach Cobbler, Country Peach Cobbler, Blueberry Shortcake

I use the following recipes for my cobblers Some have a cake like dough some have the good old fashioned southern biscuit type dough dropped in.
Also I have used a Short cake in a cobbler type recipe as well I called it cobbler but I guess it was really short cake LOl

BLACKBERRY COBBLER
1 cup flour
2 tsp. baking powder
1 cup sugar
3/4 cup milk
1/2 tsp. salt
2 1/2 cups blackberries
Combine flour, baking powder, 1/2 cup sugar, milk and salt in a bowl. Pour into greased 9x16x2 inch baking dish. Heat blackberries and 1/2 cup sugar in saucepan until it boils. Pour over batter. Bake at 400 degrees until golden brown.
EASY PEACH COBBLER
difference from above is that this one uses Jiffy (or Bisquick) I prefer the jiffy baking mix myself they are I guess basically the same though.
1/4 cup butter
4 cups peeled & sliced peaches, apples or nectarines
1/2 cup sugar
1 tbsp. plus 2/3 cup baking mix
1/2 tsp. ground cinnamon
2 tbsp. brown sugar, firmly packed
2 tbsp. milk
In 1-quart shallow casserole, combine peaches, sugar, 1 tablespoon baking mix and cinnamon. In medium bowl, mix remaining 2/3 cup baking mix with brown sugar. Cut in butter until mixture is size of small peas. Stir in milk until moistened. Drop by spoonfuls onto peaches. Bake at 400 degrees for 30 minutes or until toothpick inserted into crust comes out clean. Let stand 5 minutes. 6 servings.
Country Peach Cobbler
(This is the one my grandmom used)
she substituted different berries in this as well as a buckleberry one which had apples blueberry raspberry and blackberry all mixed in it
2 to 2 1/2 cups sugar
1/3 cup cornstarch
8 cups sliced, fresh peaches
1/2 tsp. almond extract
1/4 cup melted butter
PASTRY:
2 cups flour
2 tbsp. sugar
Pinch of salt
1/2 cup shortening
4 tbsp. ice water
1/2 cup melted butter
1/4 cup sugar
Filling:
Combine sugar and cornstarch and toss with peaches. Add the almond extract and the melted butter; set aside.
Pastry:
Combine the flour, sugar, and salt in a mixing bowl. Cut shortening into the flour until it is the consistency of cornmeal. Gradually add ice water until the dough holds its shape. Roll out on a floured board and cut into strips. Pour the peach filling mixture into the buttered 9 x 13 inch baking pan. Criss-cross dough strips over the filling and brush pastry with remaining butter. Sprinkle with sugar and bake at 400 degrees for 30 minutes or until the crust is brown.
Also here is a shortcake recipe I use many berry types etc for when the Strawberries are not yet ready Any berries can be used as well as peaches are also good.
Blueberry Shortcake
Ingredients for Biscuits:
1 3/4 cups flour
3 Tablespoons baking powder
4 Tablespoons butter or margarine
3/4 cup milk
1/4 teaspoon salt
1/2 cup sugar
Ingredients for Shortcake:
2 cups fresh blueberries
3/4 cup sugar
2 tablespoons of water
Additional blueberries for decorating
6 scoops vanilla ice cream
Whipped cream
I prefer fresh whipped cream using whipping cream and a little sugar whipped until it is consistency of whipped cream Some use the store bought cool whip or canned or dream whip
Day before sugar down your berries
Combine 2 cups blueberries and sugar in a bowl and add a little water and cover leaving in the refrigerator over night or at least 12 hours
Make biscuits the morning you plan to serve and heat a little in a oven or make right before These biscuits can also be done day before if you like and heated in some foil in the oven to warm them I do it this way that way I am not last minute baking a lot. I can also keep these on hand when I am planning on company or for a family dessert and they have a special on certain berries the kids can make their own for a snack or something
Preheat oven to 425 degrees. Combine flour, baking powder, salt and shortening in a medium-sized mixing bowl. Cut shortening into flour with pastry knife until corn-size nuggets appear. Stir in milk and mix with wood spoon for 30 seconds. Spread onto a well-flour board and knead gently for 15 seconds. Roll out to a 1/2 inch thickness and cut into 3 circles with a round cookie cutter or jar cap. Bake for 12 to 20 minutes or until golden color.
Makes: 6 to 8.
To Assemble
Slice 6 biscuits in half horizontally. in each bowl or plate pour 3 Tablespoons of sugared blueberries On top of each, place bottom half of biscuit. Place additional blueberries, scoop of ice cream and whipped cream on top of the biscuit. Top with other half of biscuit and drizzle more berry mix and a little whipped topping i also put a few whole berries on it for looks Ok and taste too the fresh berry taste with the sugared is a nice contrast I think.

Also when I am doing a lot of cobblers and such in the summer I mix a baking mix up myself in a jar and measure out saves a few steps and a couple dollars in buying one. I just mix all the dry ingredients in a jar put on lid shake well and then measure out as needed. Always shaking to be sure it has not settled any.
