Recipe: Broccoli Au Gratin

Broccoli Au Gratin

2 packages (14 oz. each) frozen broccoli florets
1 1/2 cups shredded Cheddar cheese
2 eggs, lightly beaten
2 cans (10 3/4 oz. each) cream of broccoli soup, undiluted
3/4 cup lowfat sour cream
3/4 cup finely chopped onion
1 1/2 cups herb-seasoned stuffing mix
3 tablespoons margarine or butter, melted

Preheat oven to 350F. Grease a 13x9x2-inch baking pan; set aside.

Microwave broccoli florets according to package directions; drain. Arrange cooked broccoli in prepared pan. Sprinkle with cheese.

Combine eggs, soup, sour cream and onion; spread over cheese and broccoli.

Combine stuffing mix and margarine; sprinkle over casserole.

Bake 35 to 40 minutes or until heated through.
