Recipe: Cheddar Apple Coffee Cake

Serves 9-12
My mother makes this in the fall and we can't wait for the Michigan apples to go on sale.
3 apples, peeled and chopped
2 cups (8 ounces) shredded cheddar cheese
1 can (12 ounces) refrigerated flaky biscuits
1/2 cup packed light brown sugar
1/4 teaspoon apple pie spice
1/4 cup plus 3 tablespoons maple syrup, divided
1 egg, lightly beaten
1/2 cup chopped pecans or walnuts
1 package (3 ounces) cream cheese, softened
1/3 cup confectioners sugar
Preheat the oven to 350. Coat an 8 in square baking dish with nonstick cooking spray. Sprinkle half of the apples and half of the cheddar cheese over the bottom of the baking dish, spreading evenly.
Separate the biscuit dough into individual biscuits; cut each biscuit into four pieces. Arrange the pieces over the apple and cheese mixture. Top evenly with the remaining apples and cheese.
In a small bowl, combine the brown sugar, apple pie spice, 1/4 cup maple syrup, and the egg; mix well. Stir in the nuts. Spoon over the apples and cheese and bake for 35 to 45 minutes, or until golden and cooked through. Allow to cool for 10 minutes.
In a small bow., combine the cream cheese, confectioners sugar and remaining 3 tablespoons maple syrup; whisk until smooth and pourable. Drizzle over the coffee cake, Cut and serve warm.
