CRANBERRY MACADAMIA NUT CHUTNEY
2 cups fresh cranberries
1 1/8 cups packed brown sugar
1/2 cup golden raisins
1/2 cup water
1/4 cup coarsely chopped macadamia nuts
2 tbsp. snipped crystallized ginger
2 tbsp. fresh lemon juice
Pinch salt
1/2 tsp. grated onions
1/8 tsp. ground cloves
In a large pan combine all the ingredients and stir together. Bring the mixture to a boil, stirring constantly. Simmer, uncovered, over low heat for 15 minutes, stirring occasionally, until slightly thickened.
Makes 2 1/2 cups
