Confetti Corn

Serves 6
Freezes well
fresh corn cut from the cob to equal 1 pound
2 tbsp butter, unsalted
1 medium onion finely chopped
some finely chopped green pepper
some finely chopped red bell pepper
pepper to taste (I use white pepper but black is okay)
1/2 cup cheddar or jack cheese, grated (if you like spicy, use the jack cheese with jalapeno peppers in it)
Bring to boil 2 quarts of water-add the corn that has been cut from the cobs and boil for 4 minutes. Drain and refresh in cold water-drain well. Melt butter in a frying pan over med./high heat. Add onion and cook stirring about 4 minutes-add the red and green peppers and cook stirring a few minutes. Add the corn and cook, stirring until crisp tender. Top with the cheese and let it melt.
