Orange Brussels Sprouts

Yield: 8 Servings
3 pints fresh brussels sprouts; trimmed
or
3 pkg (10 oz each) frozen brussels sprouts, thawed
2 tbsp olive oil
3 medium leeks, white part only, coarsely chopped
3 tbsp fresh ginger, chopped
1 cup orange juice
3 strips orange peel, 3x1-inch long
1 tbsp light brown sugar, firmly packed
1/2 tsp salt
1/2 tsp pepper
Bring large saucepot of water to a boil. Add fresh sprouts (if using frozen, eliminate this step) and return to boil; simmer 8 minutes until tender. Drain.
Heat oil in medium skillet over medium-high heat; add leeks and ginger. Cook, stirring, 4 minutes until browned.
Add Brussels sprouts and remaining ingredients. Cook, stirring occasionally until sprouts are heated through, about 4 minutes.
