Low Fat Creamed Corn
From: The Lose Weight Naturally Cookbook
Yield: 8 servings
8 ears fresh corn
1/4 cup skim milk
dash nutmeg
Cut the corn from the cobs, then scrape the cobs to remove the nutritious corn germ. Place 1/2 cup of the corn in a blender with the milk. Process on low speed until smooth. Place the remaining corn, corn germ and blended mixture in saucepan. Bring to boil, reduce heat and simmer 4-5 minutes. Dust with nutmeg. Serve hot.
