COUNTRY STYLE ROTINI
1 (1 lb., or about 6 cups) uncooked garden rotini pasta (tri-color)
1/4 cup olive oil
1 1/2 cups julienned ham
1/2 cup julienned red bell peppers
1 cup sliced fresh mushrooms
1 tbsp. garlic, minced
Salt and pepper to taste
3/4 cup chicken broth
3/4 cup fresh spinach, chopped
1/2 cup Parmesan cheese
Cook pasta according to package directions; drain.
Heat olive oil in a large skillet over medium heat. Saute ham, peppers and mushrooms for 2 minutes.
Add garlic and salt and pepper to skillet; cook 4 minutes.
Add chicken broth and simmer mixture for 2 minutes.
Add hot pasta and mix well. Add spinach and cook until it wilts.
Add Parmesan cheese, blend well and serve.
Makes 6-8 servings
