QUICK TOMATO SAUCE
3 tablespoons extra virgin olive oil
1 garlic clove
1 small onion, finely chopped
1 1/2 lbs ripe plum tomatoes, peeled seeded and chopped (or 28 ounces canned crushed tomatoes)
Salt and freshly ground black pepper to taste
1 sprig fresh basil (optional)
In a saute pan, heat olive oil over medium-high heat with the crushed garlic clove. Discard the garlic as it begins to turn light brown and add the onion. Cook until it turns translucent, stirring frequently, about 4 minutes.
Add the plum tomatoes, season with salt and pepper, and cook over medium heat for 20 minutes. Add basil during the last 5 minutes of cooking.
Makes 2 1/2 cups
