Recipe: Favorite Roquefort Dressing (oil-based with garlic and onion, 1960's)

"Use on any cooked or fresh vegetable salad."
1 clove garlic, sliced
1 tablespoon diced onion
2/3 cup oil
2 ounces Roquefort or blue cheese
1/3 cup vinegar or lemon juice
1/2 teaspoon paprika
1 teaspoon sugar
1 1/2 teaspoons salt
Few grains ground cayenne pepper
Combine garlic, onion and oil; Cover and let stand 1 hour, then strain.
Cream Roquefort until smooth. Slowly stir in oil mixture and remaining ingredients. Combine thoroughly.
Makes 1 cup
