GREG'S FAMOUS GRILLED FISH WITH SHRIMP
1 stick (1/2 cup) butter
1 heaping Tablespoon minced garlic
1/4 tsp Emeril's Original Seasoning
1/4 teaspoon Lawry's Salt Free 17 Seasoning Mix
1/4 teaspoon McCormick's Sundried tomato seasoning
1 1/2 pounds fresh tilapia or flounder fillets
2 lemons
1 pound salad shrimp (fresh or frozen and thawed)
Preheat grill to medium heat. Make a 9x13-sized "pan" using heavy duty tin foil with the edges rolled up about 1/2 inch high on all sides. Spray with non stick spray.
Mix first five ingredients and microwave 1-2 minutes or until butter is completely melted. Stir. Dip fish fillets into this mixture and place onto tin foil.
Cut lemons in half width-wise and squeeze lightly over fish. Put cut sized down around fish. Place shrimp over fish and pour remaining butter mixture over shrimp and fish.
Grill until shrimp are pink and fish is flaky, about 10 minutes.
