It's best if you make this the day before or several hours ahead. It's worth waiting for!
SEAFOOD SALAD
SALAD:
2 cups cooked, drained, and cooled pasta (elbows, shells, spirals, etc. - your choice)
3/4 lb of cooked lump crabmeat (not imitation)
1/2 lb medium size shrimp, cooked, shelled and cut in half lengthwise
2 ribs celery, diced
DRESSING:
1 cup real mayonnaise
2 hard boiled eggs (cold), grated
3 tbsp fresh lemon juice
2 tbsp catsup
1/2 tsp dried dill weed
Dash of salt to taste
SALAD:
In a large bowl combine cold pasta, crab and shrimp. Add celery and toss.
DRESSING:
In a small bowl combine dressing ingredients and stir until well blended. Pour over the seafood mixture and stir only until well coated.
Refrigerate several hours or overnight.
Serve on lettuce leaves with lemon wedges.
Tip: This is easy to make when you buy the shrimp and crab already cooked.
