Recipe: Hamburger or Hot Dog Buns

Hamburger or Hot Dog Buns
Makes 16-20 hamburger rolls

6 c. flour
1 Tbsp. salt
1/4 c. sugar
2 c. water (warm)
1 Tbsp. yeast
2 eggs, well beaten (works best for them to be room temperature)
1 c. shortening

Dissolve yeast in water with a pinch of sugar. Mix in with other ingredients. Knead 10 minutes. Let rise until doubled in bulk (about 45 minutes). Punch down & let rise again. Punch down & form into bun shapes (hamburger or hot dog). Let rise until double. Bake at 375 degrees for 20 minutes. Let cool until just warm to the touch; place in a sealed bag to soften crust.
