Recipe: Hawaiian Pineapple Cake with Crean Cheese Frosting

HAWAIIAN PINEAPPLE CAKE

2 cups flour
2 cups sugar (I use 1 1/2)
2 eggs
2 tsp baking soda
1 tsp vanilla
1 (20 oz.) can crushed pineapple with unsweetened juice
1/2 to 1 cup chopped nuts (optional)
Cream Cheese Frosting (recipe follows)
Chopped nuts or coconut (optional, to garnish)

Mix all ingredients for the cake batter together. Pour into a greased 13x9-inch baking pan.

Bake at 350 degrees F for about 40-45 minutes. Set on rack to cool.

Frost with Cream Cheese Frosting when cooled. Garnish with chopped nuts or coconut, if desired.

CREAM CHEESE FROSTING

1 (8 oz.) cream cheese, softened
1/2 cup butter, softened
1 3/4 cups powdered sugar
1 tsp vanilla

Mix the ingredients together.

Note: Try adding some sweetened shredded coconut to frosting.
