Recipe(tried): Hazelnut-Mushroom Pilaf

Hazelnut-Mushroom Pilaf
This is a superb side dish. One that will win you raves!
1/2 cup uncooked long grain rice
1/4 cup uncooked orzo
1/2 cup sliced mushrooms
1/2 cup diced onion
1/4 cup finely chopped celery
1/4 cup butter
2 cups chicken broth
2 TBS chopped fresh parsley
1/4 tsp dried marjoram
1/4 tsp pepper
1/2 cup coarsely chopped hazelnuts, toasted
In a large skillet, over medium-low heat, saute the rice, orzo, mushrooms, onion and celery in butter, stirring constantly, until rice is lightly browned. Stir in the remaining ingredients; bring to a boil. Reduce heat and cover; simmer for 15 minutes. Remove from heat and let stand, covered, for 10 minutes.
Yield: 4 servings.
