Recipe(tried): Holiday Eggnog Bread
Breads This was posted by Teri on AOL. I make each batch in three mini loaves pans, and wrap them as holiday gifts for Beorn's teachers.
Holiday Eggnog Bread
1. Preheat oven to 350.
2. Grease a 9x5-inch loaf pan.
3. In a large bowl, beat 2 eggs.
4. Add:
1 cup sugar
1 cup dairy eggnog
1/2 cup melted butter or margarine
2 tsp. rum extract
1 tsp. vanilla extract
5. Blend well.
6. Stir in :
2 1/4 cup flour
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. nutmeg
1/2 cup chopped nuts
1/2 cup chopped red and green candied cherries (I used maraschino instead)
7. Mix just until blended.
8. Pour into prepared loaf pan.
9. Bake for 45-50 minutes.
Pam's Notes: Chocolate chips or craisins work really well in place of the chopped cherries.
