This recipe came from a mailing trying to sell me a selection of recipe cards. Not sure how healthy it sounds despite the name!
Healthy Apple Treat
5 to 6 tart apples
8 oz. large or small curd cottage cheese
4 Tablspoons brown sugar or granulated sugar
1 to 2 teaspoons ground cinnamon
1 Tablspoon cornstarch
3 eggs
3/4 cup half and half
Preheat oven to 375 degrees F.
Rinse and peel apples. Remove core and cut apples into thin wedges. Layer apple wedges in an ovenproof pan that has been sprayed with non-stick cooking spray.
In a bowl, combine cottage chese, sugar, cinnamon and cornstarch.
In another bowl, beat eggs and combine with half- and-half. Carefully stir egg mixture into cottage cheese. Ladle over apples in pan.
Bake for about 30 minutes or until lightly browned on top and apples are soft. Serve warm or slightly cooled.
Note: Sprinkle apple wedges with a little freshly squeezed lemon juice to prevent them from turning brown. You may add 4 Tablespoons oatmeal to cottage cheese batter, if desired, before baking. You may add raisins or chopped almonds to enhance the flavor.
Good served with ice cream and coffee or tea.
