Apple Fritters

This is from a magazine clipping I have, it notes that the bubbles in the beer lighten the batter and make for a crisper fritter. You can also use nonalcoholic beer, the note says it works just fine.

8 cups peanut or corn oil
1 1/3 cups all-purpose flour
12 oz. beer
1/4 cup granulated sugar
4 medium-size Granny Smith or Braeburn apples (1 1/2 pounds)
Confectioner's sugar

Heat oil in a Dutch oven or eclectic deep fryer to 380 degrees F.

Mix flour, beer and granulated sugar in a medium-size bowl.

Core and peel apples. Cut crosswise in 1/2-inch-thick rings. Pat dry with paper towels. Using a fork, dip apple rings in batter, letting excess drip back into bowl.

Carefully slip about 4 slices into hot oil. Fry about 4 minutes, turning once, until golden brown. Remove with slotted spoon and drain well on paper towels. Repeat with remaining slices.

Dust with confectioner's sugar and serve immediately.
