Recipe: Apple Rhubarb Crisp

Apple Rhubarb Crisp

1/2 cup melted margarine
1 cup graham cracker crumbs
1/4 cup brown sugar
6 rhubarb stalks, trimmed
2 cups peeled, thin-sliced McIntosh apples
1 cup brown sugar
1/3 cup currants
1 teaspoon vanilla
1/2 teaspoon ground nutmeg

Preheat oven to 350 degrees F.

Combine margarine, graham cracker crumbs and the 1/4 cup brown sugar until mixture is crumbly; reserve.

Place rhubarb stalks in a baking pan. Cover with foil and bake for 5 minutes. Cool rhubarb and dice in 1-inch chunks. Combine rhubarb chunks with apple slices.

Blend in the 1 cup sugar, currants, vanilla and nutmeg. Spread 1/2 of the reserved crumbly mixture a 1 quart casserole that has been sprayed with non-stick baking spray. Add rhubarb and apple mixture, top with remaining crumbly mixture.

Bake at 350 degrees F. for 30 minutes. Cool slightly and serve.
