Irish Soda Bread
Yield: 1 loaf
4 cups Bisquick
1 cup whole wheat flour
3 tbsp sugar
1/4 cup firm margarine
2 eggs
1 1/2 cups buttermilk
Heat oven to 350 degrees. Grease a 1 1/2 qt. round casserole. Combine Bisquick, flour and sugar in large bowl. Cut in margarine until crumbly. Beat eggs slightly; reserve 1 tbsp. Stir remaining eggs and buttermilk into mixture until moistened. turn dough onto well-floured board. Knead 20 times. Shape dough into ball; place in casserole. Cut 4-inches cross about 1/4-inch deep in center of ball. Brush dough with reserved egg. Bake until wooden pick inserted in center comes out clean, 60-70 minutes. Cool. Remove from casserole. Serve warm. Cut into wedges and spread with soft butter.
