Jiffy Broccoli Cornbread
2 pkg (8 1/2 oz. each) Jiffy Corn Muffin Mix
2 Tbsp. butter
1 medium onion, chopped
2 cups fresh or frozen broccoli chopped, thawed and drained
1 cup cottage cheese
4 large eggs
1/4 cup milk
Preheat oven to 350 degrees. Grease a 13x9-inch baking pan.
Melt butter in skillet. Saute onion until tender, but not brown. Blend onion and remaining ingredients together well. Pour into prepared pan.
Bake for 40-45 minutes, until lightly browned.
I found this recipe at the Jiffy website and it is a moist and tasty cornbread-and a great way to get your kids to eat broccoli.
