King's Hawaiian bread (Portugese Sweet Bread)
rec.food.cooking/Ray Orosz
I requested a recipe for Hawaiian bread few months back and a good soul from Hawaii actually answered with this one. Can't say I've tried making it, however, I hear this is actually the bread, which originally came from Portugal thanks to Portuguese merchants on the Pacific Islands! My guess is the story is correct as I've had an almost identical bread in Venezuela called Pan Dulce (BTW, almost 99.9999999% of the bakeries in Venezuela are owned by Portuguese immigrants, so you be the judge). Anyway enjoy the recipe!
1 medium potato, cooked, mashed
1/3 cup warm water (110 degrees)
3 pkg dry active yeast
1/3 cup evaporated milk
2 1/4 cups sugar, divided
8 cups flour
1/4 tsp ground nutmeg
2 tsp salt
1 stick (1/2 cup) butter
6 eggs
1 tsp lemon extract
Peel, dice, and cook potato; drain. Mix 1/3 cup warm water, yeast, mashed potatoes, evaporated milk and 1/4 cup of the sugar; let stand 20 minutes.
In a large bowl, place flour, 2 cups of the sugar, nutmeg and salt; mix. Add butter; mix until well incorporated. Beat eggs, add lemon extract; add to flour mixture and mix well.
Knead dough thoroughly; grease, cover and let stand 1 hour. Repeat.
Make loaves and let rise in refrigerator 4-5 hours (honest). Bring to room temperature before baking. Bake 300 degrees for 1 hour or until done.
