Recipe: Polka-Dot Muffins (using orange juice and cranberries, Bisquick recipe, 1970's)

"A cheery muffin for the holly season or any time you have cranberries on hand. Put small hands in charge of muffin pans."
2 cups Bisquick baking mix
1/4 cup sugar
2 tbsp grated orange peel
2/3 cup orange juice
1 egg
2 tbsp vegetable oil
1/2 cup chopped cranberries*
Heat oven to 400 degrees F. Grease or paper-line 12 medium muffin cups.
Mix all ingredients except cranberries; beat vigorously 1/2 minute.
Fold in cranberries. Fill prepared muffin cups 2/3 full.
Bake 15 minutes or until golden brown.
*Frozen whole cranberries can replace the fresh. (Both kinds are easier to chop when frozen.)
Makes 12 muffins
