Recipe: Boy Scout Flapjacks (using yeast, Bisquick recipe, 1970's)

Breakfast and Brunch
BOY SCOUT FLAPJACKS

"Yeast makes these pancakes rise before your eyes. Good practice for Boy Scout pancaking."

1 pkg active dry yeast
1/4 cup warm water (105 to 115 degrees F)
2 cups Bisquick baking mix
1 egg
1 1/3 cups milk

Dissolve yeast in 1/4 cup warm water. Add (dry) baking mix, egg and milk; beat with rotary beater until smooth. Cover; let stand at room temperature 1 1/2 hours or refrigerate at least 8 hours.

Pour batter from 1/4 cup measuring cup onto hot griddle. (Grease griddle if necessary.) Bake until bubbles appear. Turn and bake other side until golden brown.

Makes about 18 pancakes
