Manhattan Clam Chowder

l cup celery, sliced
1 cup carrot, sliced
1 medium onion chopped
2-3 slices bacon, chopped
1 cup diced raw potatoes
2 (16 oz.) cans clam juice
3/4 cup water
1 cup chopped canned tomatoes
1 large bay leaf
1/2 tsp. dried thyme
salt to taste
1 can minced clams (including juice)

In soup pot saute bacon for about three minutes. Add chopped celery, carrots, onions, clam juice, water, tomatoes, bay leaf and thyme. Bring to boil and simmer for about 30 minutes. Add potatoes and simmer for another 30 minutes or until potatoes are tender. Add chopped clams and salt to taste. Simmer for another minute or so until the clams are heated through.
