MUSHROOM BARLEY PILAF
1/2 cup barley
1 1/2 cups water
1 tablespoon olive oil
1 medium onion, chopped
1 (10 oz) package mushroom, sliced
2 medium carrots, grated
1 teaspoon thyme
3/4 teaspoon salt
1/4 teaspoon pepper
Carrot curls and thyme sprig for garnish
In saucepan combine barley with 1 1/2 cups water. Over high heat bring to a boil; cover and reduce heat to medium-low. Simmer until tender and all the liquid is absorbed.
In skillet heat oil over medium heat. Add onions, mushrooms, carrots, thyme, salt and pepper; cook until tender, 10-12 minutes.
In bowl combine barley and mushroom mixture. Garnish.
Makes 8 servings
