Oatmeal muffins
Streusel:
1/3 cup oats ( quick or old fashioned)
1/4 cup all-purpose flour
1/4 cup light brown sugar,packed
3 TBSP.margarine or butter,chilled
Muffins:
1 1/2 cups all-purpose flour
1 cup oats ( quick or old fashioned)
1/2 cup sugar
1 TBSP. baking powder
1/4 tsp. salt
1 cup milk ( whole or 2%)
1/4 cup vegetable oil
1 large egg beaten
Preheat oven to 400 F. ( convection=380 -385 F)
Grease or line with paper cups,12 regular size or 6 Texas size muffin tins.
For streusel ; combine all dry ingredients in a small
bowl, cut in the chilled margarine until it resemble fine crumbs. set aside.
In a large bowl, combine the flour,oats,sugar,baking
powder and salt.Whisk well to combine.
In another bowl, combine the milk,oil and egg.
Add this mixture all at once to the dry ingredeints,
stirring only until moistened.
Spoon batter into prepared pans,dividing evenly.
Sprinkle the streusel over the tops of the muffins,
dividing equally.
Bake muffins in preheated oven for 18-20 minutes
( convection = 15-17 minutes)** or until tops are
golden brown and centers test done.
** Times and temps may vary for your convection oven...
use this as a starting point.
