Old Fashioned Saskatoon Crumb Pie
4 cups saskatoon berries
2 tbsp water or lemon juice
3/4 cup sugar
1/4 cup flour
1 tbsp margarine
Crumb Topping:
1/2 cup flour
1/3 cup brown sugar
1/2 tsp cinnamon
1/4 cup hard butter or margarine
Over low heat, simmer berries, water or lemon juice for 3-4 minutes. Remove from heat; stir in sugar, flour, and margarine. Cool; pour into unbaked 9 inch pie shell. Prepare crumb topping and spread evenly over berry mixture. Bake for 30-35 minutes at 325*F.
May also using pastry topping instead of crumb mixture: just dampen edges of pie shell and place pastry topping over top of berries. Trim and seal edges. Brush top with sugar or milk. Bake at 400*F for 10 minutes; reduce heat to 325*F and bake additional 30-35 minutes.
