Recipe: Omelettry West's Gingerbread Pancakes

OMELETTRY WEST'S GINGERBREAD PANCAKES

3 eggs
1/4 cup brown sugar
1/2 cup buttermilk
1/2 cup water or milk
1/4 cup coffee, brewed
2 1/2 cup flour
1 tbsp ground cinnamon (or to taste)
1 tbsp ground ginger (or to taste)
1 tbsp ground nutmeg (or to taste)
1 1/2 tsp baking soda
1 tsp baking powder
1 tsp ground cloves
1/2 tsp salt
4 tbsp butter, melted

Cream together the eggs and the brown sugar, then add the buttermilk, water (or milk) and coffee.

In a separate container sift together the remaining ingredients, except the butter. Then combine the liquid and solid ingredients, adding the melted butter.

Cook on a griddle as you would any other pancake. This recipe may require a fair amount of liquid adjustment. Make sure that the batter flows off of the spoon fairly evenly, or the pancakes will be too heavy, and will never cook all the way through without burning the edges!

Serve with butter, maple syrup, honey, or molasses.
