MIDDLE EASTERN FLANK STEAK
1 pound beef flank steak
1 (8 ounce) carton plain lowfat yogurt
1/3 cup chopped fresh mint
1 small red onion, finely chopped
2 cloves garlic, finely chopped
1 1/2 teaspoons cumin seed, roasted and crushed
1 tablespoon lemon juice
Freshly ground pepper
Trim excess fat from steak; place steak in glass dish.
Mix remaining ingredients; pour over steak and cover. Refrigerate, turning occasionally at least 6 hours, no longer than 48 hours.
Broil steak 3 inches from heat, 6 minutes per side for rare or until desired doneness.
Slice steak across the grain into thin slices.
Makes 4 servings
