Panna Cotta
This is a fine dessert from Italy for special occassions.
4 pers.

300 grams heavy cream
125 ml milk
2 Tbsp. sugar
2 Tbsp. Amaretto (ital. almond liquor)
2 Vanilla beans (no substitute)
4 leafs of gelatine (or equiv. amount of powdered)

Mix cream, milk, sugar, pulp of vanilla beans in heavy pan, also add empty pulp of beans, bring to a boil, reduce heat, let simmer about 15 mins. Dissolve wet gelatine in hot mixture, add liquor. Rinse small forms with cold water, fill in mixture, let cool in fridge for several hours.

For serving, dip bottom of forms into hot water, and then turn out of mould.
Serve with any kind of fruit ragout or fresh fruits (I did with a ragout of fresh cherries. But any fruit will do fine)
