Thought I should contribute something instead of just reading everyone elses' posts :) For sharing these cookies I have received offers of money, proposals of marriage, and the first time I brought them to work the others danced around making up songs and voted me employee of the month...that was actually rather scary. Hope you enjoy them!
Ingredients:
2 oz. unsweetened chocolate, melted
1/2 cup butter, softened
1 cup granulated sugar
2 large eggs
2 tsp. vanilla
1 1/2 cups flour
1/2 tsp. baking soda
1/2 cup white chocolate chips
1 1/4 cups semisweet chocolate chips
1/4 cup milk chocolate chips
Directions:
Preheat oven to 350 F.
Cream the butter and sugar. Add the melted chocolate and then add the eggs and vanilla and beat until smooth. Sprinkle the baking soda over mixture and blend in. Blend in flour. Stir in all the chips. The dough will be
soft and sticky. Place dough by rounded tablespoons 1" apart on cookie sheets that are either lightly greased or lined with parchment paper. Bake for 8 to 10 minutes. Cookies may not appear done. Let them cool on the sheet for 10 minutes before removing to a rack. You then have the horrible task of eating 1 or 2 cookies to make sure your first batch is baked to the desired doneness. We all have our crosses to bear.....
This recipe doubles easily - I ALWAYS double it - and the cookies freeze quite well.
