PALMER-BEECH CHOCOLATE PIE
1 cup sugar
2 cups milk
3 T. flour
3 T. cocoa
3 eggs
1/2 stick butter
1 teaspoon vanilla
1 unbaked pie shell
Mix sugar, cocoa, and flour. Add milk and eggs. Let mixture come to a boil. Stir vigorously. Boil until thick. Add butter and vanilla and pour into the pie shell. Bake at 325 degrees for 20-25 minutes or until the filling is set. Top with meringue.
Meringue
2 egg whites
1/2 cup sugar
2 T. water
Mix egg whites, sugar, and water in top of double boiler. Beat with mixer until thoroughly blended. Plave over boiling water and cook 1 minute, beating constantly. Remove from heat and continue beating constantly until meringue stands in peaks. Pile over chocolate pie and place in the oven just until the meringue is light brown.
Enjoy!
