Lovely recipe & so very easy. You can also use pork or veal!
Pot Roast of Beef
2 to 3 potatoes, sliced
2 to 3 carrots, sliced
1 to 2 onions, sliced
salt and pepper to taste
2 pound beef roast
1/2 cup beef broth
Put vegetables in bottom of stoneware. Salt and pepper meat to taste, put in pot. Add liquid. Cover; cook on low 10 to 12 hours. (High: 5 to 6 hours.) Remove meat and vegetables with spatula and thicken for gravy if desired. Without vegetables: Season roast with salt and pepper and any other favorite seasonings. Add no liquid. (Add 1 sliced onion to the bottom of the crockpot-this is Gladys's suggestion). Cook as directed.
